Storing Chocolate
Chocolate products are very sensitive to temperature changes, strange odours, light and air. Each of these things can cause problems that can potentially reduce the overall attractiveness of your chocolates. Therefore care should be taken to store your chocolates in their original packaging away from odours, and ideally at a temperature of between 15 – 18 degrees centigrade. Your chocolates should be eaten at room temperature. We do not recommended that you store chocolates in your refrigerator because when you bring them back to ambient temperature they sometimes can experience a temperature shock and fat-bloom can occur. (This means that the chocolates can lose some of their sheen and turn slightly grey). If you do need to put your chocolates in the fridge make sure to seal them in a plastic container or bag to avoid moisture affecting the chocolate. Never eat chocolates taken straight from the fridge, you won’t be able to pick out the flavours properly.
